P.D.O. Casera cheese - 70 days
The fruit of a centuries-old dairy tradition, Valtellina Casera is one of the two cheeses from the province of Sondrio protected by the Protected Designation of Origin. It is produced following the P.D.O.specifications.
Delicate flavor with notes of dried fruit, straw-yellow paste with amber hues, fine and widespread holes.
Minimum maturation: 70 days
INGREDIENTS: cow's MILK, salt, rennet.
Uses and pairings: perfect to taste alone or to become the protagonist - together with buckwheat, butter and cabbage - of the symbolic dish of the territory, pizzoccheri.
