The best of P.D.O. Valtellina Casera production. This cheese protected by the Protected Designation of Origin is an extraordinary example of the Valtellina cheesemaking tradition. Refined day after day in the careful hands of master maturers, when it matures for over 300 days it acquires intense aromas and a strong taste, with notes of dried fruit and scents that recall the good air of the mountains. The paste becomes yellow, crumbly, consistent.
Minimum maturation: 300 days
INGREDIENTS: Cow's MILK, salt, rennet.
