The first P.D.O. cheese in Italy produced with 100% goat's milk
Semi-mature cheese made from pure raw goat's milk, from grazing animals. The paste is compact, the taste delicate.
Originating from the Lombardy Alpine area, along the mountainous and hilly areas north of the Province of Varese, it is a semi-hard cheese characterized by a short maturation. The cheese is obtained exclusively from whole and raw milk from the Nera di Verzasca, Camosciata delle Alpi and Saanen goats: prized breeds raised mainly on pasture.
Raw milk cheeses are the absolute excellence of the dairy world. In this case, the milk is not filtered and is not heat-treated. Raw milk cheeses are therefore extremely rich in vitamins (especially A, C and D) and proteins. Easy to digest and rich in nutritional properties. Furthermore, in terms of organoleptic properties, they are much tastier and particularly aromatic.
The consumption of "raw milk" cheeses by preschool children, pregnant women, the elderly and immunocompromised people should be avoided.
