P.D.O. Bra cheese
P.D.O. Bra cheese is a raw cow's milk cheese, produced throughout the province of Cuneo. It is characterized by a compact paste, with very small holes and a color that - depending on maturation - varies from medium straw yellow to even intense yellow. Matured for a minimum of six months, placing it on wooden boards and taking due care of its evolution over time. Bra D.O.P. duro has a hard rind and a paste from slightly straw yellow to ochre yellow, with a tasty and savoury aroma.
INGREDIENTS: Raw MILK, salt, rennet.
Uses and pairings: it is an excellent table and grating cheese. It is used as an ingredient in baked gastronomic preparations and is excellent for salads. It pairs well with medium-bodied, young and ready-to-drink red wines.
Raw milk cheeses are the absolute excellence of the dairy world. In this case, the milk is not filtered and is not heat-treated. Raw milk cheeses are therefore extremely rich in vitamins (especially A, C and D) and proteins. Easy to digest and rich in nutritional properties. Furthermore, in terms of organoleptic properties, they are much tastier and particularly aromatic.
The consumption of "raw milk" cheeses by preschool children, pregnant women, the elderly and immunocompromised people should be avoided.
