Toma di Elva
Caso di Elva is a mature cheese, made from partially skimmed cow's milk, semi-fat, with raw and pressed paste.
The rind, which ranges from light yellow to reddish brown in color, is thin in the fresh product and becomes more rigid with maturation. The main characteristic of the paste, which is straw-yellow in color, is friability, which favors the possible development of natural blue veining, caused by the cracking of the rind. The aromas in the fresh cheese are intense and persistent and in the matured one they become pronounced. The maturation can last from one to several months (even up to a year).
