Pecorino delle Barme
Pecorino delle Barme is a cheese with ancient origins, it matures its qualities in the caves of the same name, wrapped in still fresh mountain hay, which in addition to preserving it from any climatic changes, contributes to its aromatic complexity.
The paste, straw yellow in color, is compact and soft to the touch, while on the palate it is sweet, characterized by pleasant hints of hazelnut and a good persistence.
Minimum maturation: 60 days
INGREDIENTS: Sheep MILK, salt, rennet.
Uses and pairings: it pairs well with structured white wines or young red wines with a low alcohol content
