Aged goat's milk cheese (95%).

The cylindrical shape with smooth sides has a straw-colored rind, resistant, naturally bloomed with reddish spots depending on the maturation. The paste is compact, soft, tasty but never aggressive in taste. The processing with pasteurized milk, the stewing of the cheese and the dry salting make this goat's toma very soft and sweet.
